
Today I propose the recipe for the cabbage rolls stuffed with meat and rice that I have prepared for the Christmas holidays.
It is a second of meat that is prepared very easily and in a very short time, in many parts of Europe.
You can prepare the rolls using also the vine leaves carefully choosing the tender ones.
How to prepare the cabbage rolls stuffed with meat and rice
Ingredients :
- 500 gr of minced pork
- 500 gr of minced beef
- 150 gr of rice
- 2 medium cabbages
- Smoked bakon
- Smoked pork ribs
- salt
- pepper
- Sweet paprika
- thyme
- 1 lemon
- 2 laurel leaves
- Oil evo q.b
Procedure :
I used the savoy cabbage that is to be bought in ethnic stores or you can also use the cabbage boiled boiling the leaves in boiling water where you have added the juice of a lemon and a handful of coarse salt.
Cut the central grain of the leaves which is very fibrous.

In a large bowl put the minced pork and beef meat, add the rice, salt and pepper.

Add the sweet paprika and mix well to absorb all the ingredients.

Take a tall, medium-sized pot and place 2 tablespoons of extra-virgin olive oil on the bottom.
Cut a few leaves of cabbage into strips and arrange them on the bottom of the pot.

Now let’s proceed with the preparation of the rolls.
Take a cabbage leaf and place a spoonful of minced meat on top, roll up to the end and fold the ends pushing the inside of the roll.





Arrange the rolls in a circle until the first layer is complete.

Add the cabbage cut into strips, a sprinkling of thyme and bacon, bacon into cubes and proceed with the other layers of rolls.

Finish the last layer with the cabbage cut into strips, the bay leaves, a sprinkling of thyme and smoked pork ribs.
Add water until all the rolls are covered.
Cook over low heat for about 2 hours.

Serve your savoy cabbage rolls filled with meat and rice.
If you wish, add a spoonful of white greek yogurt on top of the rolls and add some spicy fresh peppers.
