The rump of veal is the ideal piece to use because the slices are compact and very tasty but other cuts such as the rose, the scannello or the walker will be equally good. Any fatty parts should be removed.
The breadcrumbs at the moment (possibly unsalted common bread) is the ideal one because it is less dry than what you buy already grated and you get a more crunchy breading.

How to prepare breaded slices of meat
Ingredients for 4 people:
500 gr Veal slices
2 eggs
breadcrumbs Q. b
Seed oil
Salt
Proceedings
Whisked eggs in a bottom plate is in another put the breadcrumbs.


Pass the slices first into the new one and then into the breadcrumbs making it adhere well on both sides.


Create cuts on all sides of the slices of meat to prevent it from curling during baking.
Put the slices on a plate.
Heat the seed oil and as soon as it is hot fry the slices of bread on both sides until they become beautiful golden, about 3 minutes per side.


Put the freshly fried breaded slices on absorbent paper to let them dry.
Add a sprinkled of salt.

Serve hot on a bed of valerian.
