Courgettes stuffed with meat
The courgettes stuffed with meat are a very rich and tasty second course of meat.
- 4 large zucchini
- 150 Gr ground beef
- 100 gr ground pork
- 10 cherry tomatoes
- 1 egg
- 100 gr Parmesan cheese
- 1 tablespoon parsley
- Extra virgin olive oil
First we wash the courgettes and cut them in half.
With the help of a teaspoon we remove the pulp by digging the inside of the courgettes.
Put a saucepan with salted water on the heat and blanch the courgettes for 10 minutes starting when the water boils.
Then remove the courgettes from the pot and let it drain off the water and cool.
Separately in a bowl, prepare the composing by putting together the minced meat, egg, parmesan, parsley, salt and pepper.
We knead all the ingredients by hand until we obtain a homogeneous mixture.
Now let’s make zucchini.
Take a baking dish, grease it with a drizzle of extra virgin olive oil and add a splash of white wine.
Lay the stuffed courgettes in the pan, sprinkle with Parmesan and add the Pachino tomatoes cut in half to serve as a color.
Bake in a preheated oven at 180 degrees for 30 -35 minutes.
