Lemon sole

How to prepare the lemon sole
Ingredients:
- Fresh or frozen sole
- A clove of garlic
- Fresh parsley
- 1 lemon
- Salt
- Extravirgin olive Oil

You have to peel the sole from the fishmonger of confidence.
Wash the sole with tap water and dry well.
Take a frying pan and add a drizzle of extra virgin olive oil. Lay the sole in the frying pan.

Add a clove of garlic, 1 glass of water, salt and roughly chopped parsley.

Cook over a medium low heat for 15 minutes with the lid on.
At half cooking, turn the sole on the other side.
When cooked, add the juice of half a lemon and cook again for 1 minute.
Cooking depends on the size of the sole.
Fillet the sole, taking care to remove all the plugs.
Place the fish fillets on a plate, season with the cooking sauce, extra virgin olive oil with lemon juice and a sprinkled of fresh chopped parsley.

Lemon sole is ready to serve.
