How to prepare the sea snails with tomato
Ingredients for 4 people:
- 1 kg of snails
- 2 cloves of garlic
- chilli pepper
- Extra virgin olive oil Q. b
- 800 gr tomato sauce
- salt q. b
Put the sea snails into soak with water and salt for 2 hours.
After this time, rinse the sea snails well with water and put them to boil, together with 1 tablespoon of coarse salt for 16 minutes. When they are ready, low-cut and rinse several times with cold water rubbing them well with your hands to eliminate the skin that they have on the tail.
Put the sea lumachines aside and start preparing the saute base with the whole garlic cloves, extra virgin olive oil and chilli pepper.
As soon as the garlic turns golden, combine the sea lumachines and sauté for a while.
Add the tomato puree, stir and salt and continue cooking for 20-25 minutes until the sauce thickens.
Buy fresh sea lumachines and cook them within a few hours. With the sauce of the sea lumachines you can prepare a first of pasta you want. You can serve the hot sea lumachines as an appetizer with bread croutons or accompanied by fried and crispy polenta.
