Black Cabbage Soup
Black cabbage soup is a good way to eat one of the healthiest vegetables we have, is a valuable ally against cancer as well as safeguarding the heart.
It contains a lot of calcium and has a strong antioxidant power, especially when consumed raw.
It is not among the most popular vegetables because of its bitter taste, not liked by everyone.
Usually it is necessary to wait for winter frosts to taste a perfect black cabbage in the consistency of the leaves.

Ingredients for 4 people:
1 bunch black cabbage
one medium carrot
one small Onion
1 Celery Coast
2 garlic cloves
1 medium Potato
300 gr Boiled Beans
Vegetable broth Q. b
EVO Oil
Salt

How to prepare the black cabbage soup
To prepare the black cabbage soup, first you have to wash all the vegetables well, cut into pieces the carrot, celery, onion and chop everything finely, I used a chopper.

Then cut the black cabbage into pieces and put it aside.
In a pan, sauté with the oil evo the chopped vegetables, add also the 2 cloves of garlic that will later be removed, stewed for a while, add the potatoes cut into pieces, saute for 5 minutes, add the black cabbage washed and cut previously in three or four parts, and stir for a while, then add the beans too.

Continue cooking by adding the previously prepared broth, (just enough) and cook until the
cooking is finished.

The black cabbage soup is now ready and can be served with hot slices of bread.
