Homemade egg pasta
Homemade egg pasta is very easy and quick to prepare.
Making fresh pasta may seem daunting, but it is a simple luxury that you can enjoy every day.
It takes about 15 minutes to prepare the dough and another 30 minutes to make it rest, before processing the delicious fettuccine.
In all, in less than an hour you will have homemade egg pasta with your hands, like the real Emilian one time.

Here is the recipe to prepare the fettuccine, Pappardelle or Tagliolini homemade, to dress as you like.
Ingredients for 4 people:
- 400 g flour
- 4 Eggs, possibly organic
- A pinch of salt
Proceedings
The classic recipe of homemade egg pasta is for one person :1 big egg and 100 gr of flour.Just add more eggs and more flour for doing more homemade egg pasta.
Take a capacent bowl and pour the flour into a fountain.
In the middle you form a hole with your hands.
Break the eggs gently and add the pinch of salt.

Help yourself with a fork and whisked the eggs by slowly incorporating the flour from the edges of the bowl with circular movements.


Gradually the dough will become more and more consistent.

Transfer to a pastry board or a wooden or marble top and work the dough vigorously for about 10 minutes, pulling it in all directions with the back of your hands.

Once it becomes smooth form a ball and wrap it in the film.
Let it rest for 30 minutes at room temperature.
Once it is rested, remove it from the film and cut a piece that you will use to form the first sheet.

Always cover the remaining dough with the film in order to prevent it from drying out.
Form a small ball, flour and help with a floured wooden rolling pin to form the pastry.
Let dry the floured pastry for a few minutes.

Then roll up the pastry and cut with a knife strips of about 8 mm.

Always flour in order not to stick the dough on the work surface.

Open the cut rolls and let them dry while waiting for cooking.

Continue in the same way with the other sheets of pasta.
Cook the fettuccine in boiling salted water and season as you like.
