Lasagna Bolognese
Lasagna Bolognese is a delicious traditional dish typical of Emilia, are often cooked on occasion of special parties or celebrations.
The lasagna Bolognese are a consistent dish, nutritionally complete often served as a single dish.
Here I propose my recipe of lasagna bolognese.
First you have to prepare the Bolognese sauce, the homemade egg puff pastry, or you can buy it both dry and fresh and then the béchamel sauce.
How to make lasagna Bolognese
Ingredients for 6-8 people:
• 1 kg Bolognese sauce
• 500 g fresh Pasta
• 300 gr béchamel
• 500 gr mozzarella
• 200 gr Parmigiano Reggiano
Procedure for the preparation of lasagna Bolognese sauce
Ingredients for 6 people:
• 400 g ground beef
• 100 g ground pork
• 1 kg tomato sauce
• 1/2 glass of white wine
• 1 carrot
• 1 onion
• 1 celery coast
• 1 garlic clove
• 2 laurel leaves
• Extra virgin olive oil Q. b
• Pepper
• Salt Q. b
Proceedings
Wash and finely chop the vegetables (carrot, onion and celery) with a sharp knife or a grater.

Take a large pot, high medium height and start to prepare the sauté of vegetables that you have chopped previously, put extra virgin olive oil and add 1 clove of garlic and 2 laurel leaves, fry everything on medium heat, stirring from time to time.

When the vegetables are ready raise the flame and add the minced meat and stir continuously to prevent it from sticking, keep the flame high and add the white wine and stir until the wine evaporates and the meat smeers.

After taht taste of salt and pepper and then add the tomato sauce and stir.

Lower the flame to a minimum, cover with a lid and cook the bolognese sauce for 3 hours, turn with a wooden spoon from time to time.
When the cooking is finished check the salt again .

How to prepare the Béchamel
Ingredients:
• 500 ml whole milk
• 50 gr Butter
• 50 gr sieved flour
• Nutmeg
• Salt
The béchamel prepared at home is definitely much tastiest than those found at the supermarket.
The process is fast and economical .
Heat the milk in a saucepan and in another saucepan melt the butter, as soon as the butter has melted remove from the heat and add the sifted flour and continue cooking until it becames golden.
Add the hot milk flush and stir with a whisk so that no lumps are formed.
Finaly salt and nutmeg and cook for about 5 minutes until the béchamel becomes dense.
How to prepare egg pasta
Ingredients:
• 500 g flour
• 5 egs
On the work surface place the flour in the mountain, in the center create a hole and put the eggs.
Knead by bringing the flour towards the center until you get a smooth dough.
Cover with the film and let stand for 30 minutes.
Prepare the egg dough sheets using a rolling pin and pulling from the center outwards.
How to prepare Lasagna Bolognese

Take a baking dish and spread a first layer of Bolognese sauce, arrange the egg sheets and again sprinkle with Bolognese sauce, béchamel, mozzarella cut into slices and a sprinkling of parmesan.


Continue with many layers of egg puff pastry, meat sauce, béchamel, mozzarella and parmesan, until the baking pan is filled.


Finish with the last layer of egg puff pastry, meat sauce, mozzarella cheese and a nice sprinkling of parmesan cheese. Inform the lasagne Bolognese in the oven at 180 grade for 25 minutes before serving, rest the lasagne bolognese for 10 minutes.
