Legumes and cereals Soup
Legumes and cereals soup is a very simple first course to prepare, healthy and hearty. Enriched with vegetables and aromatic herbs, the legume and cereal soup is ideal to eat hot during the cold winter days but also warm throughout the rest of the year.
To prepare this soup, we recommend using the mixed legume and cereal packs that are sold ready in supermarkets.
The soup that we propose in this recipe was made with 10 types of legumes and two varieties of cereals.
In particular, the soup contains: cannellini beans, borlotti beans, buni beans, black-eyed beans, black beans, green peas adzuki beans, green and red lentils, spelled and pearl barley.
If you have crusts or leftovers of cheese to grate in the refrigerator, also insert those in the soup during cooking: you will see what flavor!
The legume and cereal soup is a substantial first course which, due to its nutritional characteristics, can also be considered a balanced single dish.
Try this tasty and balanced first course,healthy and substantial
- 400 Gr mixed legumes and dried cereals
- 2 Ribs of celery
- 2 carrots
- one onion
- 3 tbsp tomato sauce
- Vegetable broth
- Extra virgin olive oil
1. First, soak the legumes in a bowl with cold water the night before.
2.The next day proceed with the preparation .
Wash and chop the onion, celery, carrots and garlic, then take a large saucepan and cook the chopped veggetables .
3. Add the legumes, rinse first with water before proceeding.
Mix and continue cooking for a few minutes, then add the tomato sauce.
Stir for a minute and combine the vegetable broth, salted and cover with a lid and boil for about 1 hour over low heat.
When cooking, add more vegetable broth, if necessary, so that the soup remains enough liquid.
4. After cooking, check the salt and serve hot your tasty soup, accompanied with croutons bread or some slices of toasted bread.
