Risotto with grated zucchini
Risotto with grated zucchini is a first course rich in nutrients and minerals thanks to this delicious vegetable.
The risotto is prepared in a short time and with few ingredients, it remains a light and pleasant dish.
Even the little ones like it very much because of its delicacy.
Here below I describe my very simple quick recipe.
Ingredients for 4 people :
- 4 medium zucchini
- Carnaroli Rice 350 Gr
- Leek
- salt
- A nut of butter
- Extra virgin olive oil
- Vegetable broth 1 l
Method
How to prepare risotto with grated zucchini
1. First prepare the vegetable broth.
Put an onion, a courgette, a carrot, a few grains of pepper and a bay leaf in a pot, add the salt and cover with water.
Cook for 40-45 minutes with the lid. Strain as soon as ready and set it aside.
2. In a pan, add the extra virgin olive oil and sauté the sliced leek.

Add the washed and grated zucchini, salt and continue cooking.
3. In another separate saucepan, melt the butter and brown the previously washed rice.
Add a couple of ladles of vegetable broth and cook the rice al dente.
4. Now add to the zucchini and leeks, the rice cooked al dente and stir, add another ladle of broth and continue cooking.
5. Add the Parmesan, stir and serve the risotto with the courgettes.
