 Vegetable and legume soup

Vegetable and legume soup a genuine recipe rich in minerals, fiber and vitamins and with the addition of legumes we also have a good dose of protein.

You can serve minestrone with pasta, rice or simply with toasted bread.

You can make your own minestrone using the vegetables you like the most according to your tastes and of course the season.

Vegetable soup can be cooked cold in summer and warm in winter.

I propose the hot variant of minestrone.

 

Ingredients:

  • Celery 2 ribs
  • garrarlic 2 cloves
  • 2 medium potatoes
  • 2 zucchini
  • 150 Gr cauliflower
  • 100 Gr pumpkin
  • 200 Gr borlotti beans
  • 200 Gr spinach
  • Pachino cherry tomatoes
  • 150 Gr peas
  • Parsley
  • salt
  • Extra virgin olive oil
  • pepper

Method

How to make vegetable and legume soup

1. First wash and clean all the vegetables.

    vegetables  2. Cut the celery, carrots and onion into slices.

3. Prepare a sauce with the celery, carrot, onion and garlic which you will then remove.

4. Cut the courgettes, potatoes and pumpkin into cubes.

5. Cut the cauliflower into small pieces and cut the tomatoes into small pieces.

6. Add the diced vegetables to the sautéed celery, carrots, onion and garlic: courgettes, potatoes, pumpkin, borlotti beans, cauliflower florets and cherry tomatoes.

Cook for 5-10 minutes over medium heat, stirring constantly with a wooden spoon.

Add salt and mix all the ingredients well.

Keep the peas and spinach aside for the end.You’ll add the peas and the spinach after .

peas  7. Add water to cover all the vegetables, cover with a lid and cook over low heat for about 40 minutes.
